Asian Sesame Chicken Salad

Prep: 10 mins Cook: 0 mins Total: 10 mins Servings: 3

Ingredients

  • 3 cups shredded cabbage (green or napa)
  • 2 cups shredded rotisserie chicken
  • 1 can mandarin oranges, drained
  • 1/3 cup crispy wonton strips
  • 1/4 cup sliced almonds, toasted
  • 2 green onions, sliced
  • Dressing: 3 tbsp rice vinegar, 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp honey, 1 tsp grated ginger

Instructions

  1. Whisk together all dressing ingredients in a small bowl.
  2. In a large bowl, combine cabbage, chicken, mandarin oranges, and green onions.
  3. Pour dressing over and toss well.
  4. Top with crispy wonton strips and toasted almonds.
  5. Serve immediately or pack for lunch (add wontons and almonds day-of for crunch).

Recipe Tips

  • Napa cabbage is more tender; green cabbage is crunchier. Both work great.
  • Add the wontons and almonds right before eating to keep them crunchy.
  • This salad holds up well — the cabbage doesn’t wilt like lettuce.
  • Make extra dressing — you’ll want it on everything.
