- 2 cups shredded rotisserie chicken
- 1 can mandarin oranges, drained
- 1/3 cup crispy wonton strips
- 1/4 cup sliced almonds, toasted
- 2 green onions, sliced
- Dressing: 3 tbsp rice vinegar, 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp honey, 1 tsp grated ginger
Instructions
- Whisk together all dressing ingredients in a small bowl.
- In a large bowl, combine cabbage, chicken, mandarin oranges, and green onions.
- Pour dressing over and toss well.
- Top with crispy wonton strips and toasted almonds.
- Serve immediately or pack for lunch (add wontons and almonds day-of for crunch).
Recipe Tips
- Napa cabbage is more tender; green cabbage is crunchier. Both work great.
- Add the wontons and almonds right before eating to keep them crunchy.
- This salad holds up well — the cabbage doesn’t wilt like lettuce.
- Make extra dressing — you’ll want it on everything.
