Avocado Chicken Salad Wraps

Prep: 10 mins Cook: 0 mins Total: 10 mins Servings: 2

Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 ripe avocado, mashed
  • 1 tablespoon lime juice
  • 2 tablespoons red onion, finely diced
  • 2 tablespoons cilantro, chopped
  • Salt, pepper, and pinch of cumin
  • 2 large flour tortillas
  • Romaine lettuce and sliced tomato

Instructions

  1. Mash avocado with lime juice, salt, pepper, and cumin.
  2. Fold in shredded chicken, red onion, and cilantro.
  3. Lay lettuce and tomato slices on each tortilla.
  4. Spoon the avocado chicken salad down the center.
  5. Fold in the sides and roll tightly. Slice in half.

Recipe Tips

  • Use a ripe but firm avocado — too soft and it gets mushy.
  • The lime juice prevents browning and adds brightness.
  • Wrap tightly in foil for a mess-free lunch.
  • Add corn, black beans, or jalapeño for a Southwest version.
