BBQ Chicken Quesadillas

Ingredients

  • 2 large flour tortillas
  • 1.5 cups shredded rotisserie chicken
  • 1/4 cup BBQ sauce
  • 1.5 cups shredded Monterey Jack or cheddar cheese
  • 1/4 red onion, thinly sliced
  • 2 tablespoons fresh cilantro, chopped
  • Ranch dressing for dipping

Instructions

  1. Toss shredded chicken with BBQ sauce until well coated.
  2. Place a tortilla in a dry skillet over medium heat. Spread cheese, BBQ chicken, red onion, and cilantro on one half.
  3. Fold the tortilla over and press gently.
  4. Cook 3 minutes until the bottom is golden and crispy. Flip and cook another 3 minutes.
  5. Slice into wedges. Serve with ranch dressing for dipping.

  • A dry skillet (no oil) gives the crispiest result — the cheese fat is enough.
  • Don’t overfill or it won’t fold properly.
