Mushroom and Black Bean Quesadillas

Ingredients

  • 4 large flour tortillas
  • 8 oz mushrooms, sliced
  • 1/2 can (7.5 oz) black beans, drained and mashed slightly
  • 1.5 cups shredded Mexican cheese blend
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon olive oil
  • Salt and pepper
  • Salsa, sour cream, and guacamole for dipping

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add sliced mushrooms and cook 4-5 minutes until golden and moisture has evaporated. Season with cumin, paprika, salt, and pepper.
  2. Add mashed black beans to the mushrooms, stir to combine, and remove the filling to a bowl.
  3. Wipe the skillet clean. Place a tortilla in the dry skillet over medium heat.
  4. Spread cheese, then the mushroom-bean filling on one half of the tortilla. Fold the other half over.
  5. Cook 2 minutes until the bottom is golden and crispy. Flip and cook another 2 minutes. Repeat with the second quesadilla. Slice into wedges and serve with salsa, sour cream, and guacamole.

  • Don’t crowd the mushrooms — spread them in a single layer so they brown instead of steam.
  • Mashing the black beans slightly helps them stick inside the quesadilla instead of falling out.
  • A dry skillet (no oil) gives the crispiest tortilla. The cheese fat is enough.
