Sesame Garlic Ramen

Prep: 3 mins Cook: 9 mins Total: 12 mins Servings: 1

Ingredients

  • 1 packet instant ramen noodles (discard the seasoning packet)
  • 2 cups chicken broth (or vegetable broth)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 clove garlic, minced
  • 1/2 teaspoon chili garlic sauce or sriracha
  • 1 soft-boiled egg
  • Toppings: sliced green onions, sesame seeds, corn, spinach, nori

Instructions

  1. Start the soft-boiled egg: lower an egg into boiling water, cook 6.5 minutes, then transfer to ice water. Peel when cool.
  2. In a saucepan, heat chicken broth over medium heat. Add soy sauce, sesame oil, minced garlic, and chili garlic sauce. Bring to a simmer.
  3. Add ramen noodles (discard the seasoning packet — your broth is better). Cook 2-3 minutes until noodles are tender.
  4. Pour everything into a bowl — broth and noodles.
  5. Slice the soft-boiled egg in half and place on top. Add green onions, sesame seeds, and any other toppings. Serve immediately.

Recipe Tips

  • 6.5 minutes is the magic number for a jammy soft-boiled egg with a runny center.
  • Use the ice bath — it stops the cooking and makes peeling effortless.
  • Add a handful of fresh spinach to the hot broth — it wilts in 30 seconds for easy greens.
  • Leftover rotisserie chicken turns this into a high-protein meal.
