Steak Bites with Garlic Butter

Prep: 3 mins Cook: 7 mins Total: 10 mins Servings: 2

Ingredients

  • 1 lb sirloin or ribeye steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh rosemary or thyme, chopped
  • Salt and pepper
  • Fresh parsley for garnish

Instructions

  1. Pat steak cubes dry and season generously with salt and pepper.
  2. Heat olive oil in a cast iron skillet over HIGH heat until smoking.
  3. Add steak bites in a single layer — don’t crowd. Sear 2 minutes without moving, then flip and sear another 2 minutes for medium-rare.
  4. Reduce heat to medium. Add butter, garlic, and herbs. As the butter melts and foams, spoon it over the steak bites continuously for 1 minute.
  5. Remove to a plate, pour the garlic butter over the top, and garnish with parsley.

Recipe Tips

  • Dry steak = better sear. Pat with paper towels before seasoning.
  • Don’t crowd the pan — cook in 2 batches if needed. Crowding causes steaming.
  • For medium-rare: 2 min per side. Medium: 3 min per side. Well-done: 4 min per side.
  • Basting with the garlic butter is the key step — it infuses flavor and creates a glaze.
