Zucchini Fritters
Ingredients
- 2 medium zucchini, grated
- 1/3 cup crumbled feta cheese
- 2 tablespoons fresh dill, chopped
- 1 large egg
- 1/4 cup all-purpose flour
- 2 tablespoons olive oil
- Salt and pepper
- Sour cream or tzatziki for serving
Instructions
- Grate zucchini and squeeze out as much moisture as possible using a clean towel. This is the most important step.
- In a bowl, combine squeezed zucchini, feta, dill, egg, flour, salt, and pepper. Mix well.
- Heat olive oil in a skillet over medium-high heat.
- Drop 2-tablespoon portions into the pan, flatten slightly. Cook 3-4 minutes per side until golden and crispy.
- Drain on paper towels. Serve with sour cream or tzatziki.
Recipe Tips
- SQUEEZE the zucchini dry. Wet zucchini = soggy fritters. Wring it in a towel until no more water comes out.
- Don’t flip too early — let a golden crust form first.
- These are best eaten immediately while crispy.
- Add corn kernels or diced bell pepper for extra color and texture.
