Ingredients

  • 2 medium zucchini, grated
  • 1/3 cup crumbled feta cheese
  • 2 tablespoons fresh dill, chopped
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 2 tablespoons olive oil
  • Salt and pepper
  • Sour cream or tzatziki for serving

Instructions

  1. Grate zucchini and squeeze out as much moisture as possible using a clean towel. This is the most important step.
  2. In a bowl, combine squeezed zucchini, feta, dill, egg, flour, salt, and pepper. Mix well.
  3. Heat olive oil in a skillet over medium-high heat.
  4. Drop 2-tablespoon portions into the pan, flatten slightly. Cook 3-4 minutes per side until golden and crispy.
  5. Drain on paper towels. Serve with sour cream or tzatziki.
