Steak Bites with Garlic Butter
Ingredients
- 1 lb sirloin or ribeye steak, cut into 1-inch cubes
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary or thyme, chopped
- Salt and pepper
- Fresh parsley for garnish
Instructions
- Pat steak cubes dry and season generously with salt and pepper.
- Heat olive oil in a cast iron skillet over HIGH heat until smoking.
- Add steak bites in a single layer — don’t crowd. Sear 2 minutes without moving, then flip and sear another 2 minutes for medium-rare.
- Reduce heat to medium. Add butter, garlic, and herbs. As the butter melts and foams, spoon it over the steak bites continuously for 1 minute.
- Remove to a plate, pour the garlic butter over the top, and garnish with parsley.
Recipe Tips
- Dry steak = better sear. Pat with paper towels before seasoning.
- Don’t crowd the pan — cook in 2 batches if needed. Crowding causes steaming.
- For medium-rare: 2 min per side. Medium: 3 min per side. Well-done: 4 min per side.
- Basting with the garlic butter is the key step — it infuses flavor and creates a glaze.
