Buffalo Cauliflower Bites
Ingredients
- 1 large head cauliflower, cut into bite-sized florets
- 1/2 cup all-purpose flour
- 1/2 cup water
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/3 cup buffalo hot sauce (like Frank’s RedHot)
- 2 tablespoons melted butter
- Ranch dressing and celery sticks for serving
Instructions
- Preheat oven to 450°F. Line a baking sheet with parchment.
- Whisk flour, water, garlic powder, and paprika into a thin batter. Dip cauliflower florets in the batter and place on the baking sheet.
- Bake 10 minutes until the coating is set and starting to crisp.
- Mix buffalo sauce with melted butter. Toss the baked cauliflower in the buffalo sauce.
- Return to the oven for 3-4 minutes. Serve with ranch and celery.
Recipe Tips
- The batter should be thin — like crepe batter, not pancake batter.
- 450°F is important — lower temps won’t crisp the coating properly.
- Frank’s RedHot is the classic buffalo wing sauce. Others work but the flavor is different.
- For extra crispiness, spray the battered florets with cooking spray before the first bake.
