15-Minute Taco Skillet

Prep: 2 mins Cook: 13 mins Total: 15 mins Servings: 4

Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning (or 2 tablespoons homemade)
  • 1 can (15 oz) black beans, drained
  • 1 cup corn (frozen is fine)
  • 1 cup salsa
  • 1 cup shredded Mexican cheese blend
  • Toppings: sour cream, avocado, cilantro, lime wedges
  • Tortillas, rice, or chips for serving

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spatula, until browned — about 5-6 minutes. Drain any excess fat.
  2. Add taco seasoning and 1/4 cup water. Stir until the meat is evenly coated.
  3. Add black beans, corn, and salsa. Stir to combine and let simmer for 3-4 minutes.
  4. Sprinkle cheese over the top, cover the skillet, and let it melt for 2 minutes.
  5. Remove the lid and top with sour cream, diced avocado, cilantro, and a squeeze of lime. Serve with tortillas, rice, or tortilla chips.

Recipe Tips

  • Make your own taco seasoning: 1 tbsp chili powder, 1 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne, salt.
  • Use ground turkey for a leaner option — the seasoning carries the flavor.
  • Leftovers make amazing quesadilla filling the next day.
  • For a low-carb version, serve over cauliflower rice or in lettuce cups.
