15-Minute Taco Skillet
Ingredients
- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning (or 2 tablespoons homemade)
- 1 can (15 oz) black beans, drained
- 1 cup corn (frozen is fine)
- 1 cup salsa
- 1 cup shredded Mexican cheese blend
- Toppings: sour cream, avocado, cilantro, lime wedges
- Tortillas, rice, or chips for serving
Instructions
- Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spatula, until browned — about 5-6 minutes. Drain any excess fat.
- Add taco seasoning and 1/4 cup water. Stir until the meat is evenly coated.
- Add black beans, corn, and salsa. Stir to combine and let simmer for 3-4 minutes.
- Sprinkle cheese over the top, cover the skillet, and let it melt for 2 minutes.
- Remove the lid and top with sour cream, diced avocado, cilantro, and a squeeze of lime. Serve with tortillas, rice, or tortilla chips.
Recipe Tips
- Make your own taco seasoning: 1 tbsp chili powder, 1 tsp cumin, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp cayenne, salt.
- Use ground turkey for a leaner option — the seasoning carries the flavor.
- Leftovers make amazing quesadilla filling the next day.
- For a low-carb version, serve over cauliflower rice or in lettuce cups.
