Cheesy Broccoli Quesadilla
Ingredients
- 2 large flour tortillas
- 1.5 cups shredded cheddar cheese
- 1 cup broccoli florets, steamed and finely chopped
- 1 tablespoon butter
- Optional: ranch dressing or ketchup for dipping
Instructions
- Steam broccoli in the microwave: place florets in a bowl with 2 tablespoons water, cover, and microwave 2 minutes. Drain and chop finely.
- Place a tortilla in a dry skillet over medium heat. Spread half the cheese, then all the chopped broccoli, then the remaining cheese.
- Top with the second tortilla and press down gently.
- Cook 3 minutes until the bottom is golden. Carefully flip (use a plate to help) and cook another 3 minutes.
- Slide onto a cutting board, let cool 1 minute, slice into wedges. Serve with ranch or ketchup for dipping.
Recipe Tips
- Chop the broccoli as finely as possible — the smaller the pieces, the less detectable.
- The cheese-broccoli-cheese layering is key. Cheese on both sides glues everything together.
- Steaming in the microwave is the fastest method and makes the broccoli tender enough to chop fine.
