Everything Bagel Avocado Egg Cups

Ingredients

  • 2 ripe avocados, halved and pitted
  • 4 small eggs (or 2 large, divided)
  • 2 tablespoons everything bagel seasoning
  • Flaky sea salt and black pepper
  • Hot sauce (optional)
  • Fresh chives for garnish

Instructions

  1. Preheat oven to 400°F. Scoop out a little extra avocado from each half to make room for the egg.
  2. Place avocado halves in a muffin tin (to keep them stable) or on a baking sheet.
  3. Crack an egg into each avocado half. Season with salt and pepper.
  4. Sprinkle everything bagel seasoning generously on top.
  5. Bake 12-14 minutes until egg whites are set but yolks are still slightly runny. Garnish with chives and hot sauce.

Recipe Tips

  • Use a muffin tin to keep the avocados from tipping over.
  • Small eggs fit better — or crack a large egg and use just the yolk + some white.
  • The avocado continues to cook after you remove it from the oven. Pull them when the white is just barely set.
