Stuffed Bell Peppers (Speed Version)
Ingredients
- 4 bell peppers, halved and seeded
- 1 lb ground turkey
- 1 cup cooked rice
- 1/2 cup tomato sauce
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1 cup shredded mozzarella
- Salt and pepper
- Fresh basil for garnish
Instructions
- Place pepper halves in a microwave-safe dish with 2 tablespoons water. Microwave 4-5 minutes until slightly softened.
- While peppers soften, cook ground turkey in a skillet over medium-high heat, breaking it up, for 5-6 minutes. Drain fat.
- Add rice, tomato sauce, Italian seasoning, garlic powder, salt, and pepper to the turkey. Stir to combine.
- Stuff each pepper half with the turkey-rice mixture. Top with shredded mozzarella.
- Broil for 3-4 minutes until cheese is melted and bubbly. Garnish with fresh basil.
