Ingredients

  • 2 large eggs
  • 3/4 cup milk
  • 1/2 cup all-purpose flour
  • 1 tablespoon melted butter + more for the pan
  • Pinch of salt
  • 4 slices deli ham
  • 1 cup shredded gruyère or Swiss cheese
  • Dijon mustard (optional)

Instructions

  1. Blend eggs, milk, flour, melted butter, and salt until smooth. Let rest 2 minutes.
  2. Heat a non-stick skillet over medium heat with a thin layer of butter. Pour 1/4 cup batter, swirl to coat the bottom evenly.
  3. Cook 1-2 minutes until edges lift. Flip and cook 30 seconds on the other side.
  4. While warm, lay a slice of ham and a handful of cheese on each crêpe. Fold into quarters.
  5. Return folded crêpes to the pan for 30 seconds to melt the cheese. Serve with Dijon mustard.
