Ham and Cheese Crêpes
Ingredients
- 2 large eggs
- 3/4 cup milk
- 1/2 cup all-purpose flour
- 1 tablespoon melted butter + more for the pan
- Pinch of salt
- 4 slices deli ham
- 1 cup shredded gruyère or Swiss cheese
- Dijon mustard (optional)
Instructions
- Blend eggs, milk, flour, melted butter, and salt until smooth. Let rest 2 minutes.
- Heat a non-stick skillet over medium heat with a thin layer of butter. Pour 1/4 cup batter, swirl to coat the bottom evenly.
- Cook 1-2 minutes until edges lift. Flip and cook 30 seconds on the other side.
- While warm, lay a slice of ham and a handful of cheese on each crêpe. Fold into quarters.
- Return folded crêpes to the pan for 30 seconds to melt the cheese. Serve with Dijon mustard.
