Peanut Chicken Satay Skewers
Ingredients
- 1.5 lbs chicken breast, cut into strips
- Wooden skewers, soaked
- Marinade: 2 tbsp soy sauce, 1 tbsp curry powder, 1 tsp turmeric, 1 tbsp lime juice
- Peanut sauce: 1/4 cup peanut butter, 2 tbsp soy sauce, 1 tbsp honey, 1 tbsp lime juice, 1 tbsp sriracha, 2 tbsp warm water
- Garnish: crushed peanuts, cilantro, lime wedges
Instructions
- Thread chicken strips onto soaked skewers. Brush with the marinade mixture.
- Heat a grill pan or skillet over medium-high heat with a little oil.
- Cook skewers 3-4 minutes per side until charred and cooked through.
- While chicken cooks, whisk all peanut sauce ingredients until smooth. Thin with water if needed.
- Serve skewers with peanut sauce, crushed peanuts, cilantro, and lime.
