Banana Oat Pancakes (No Flour)
Ingredients
- 2 ripe bananas (the riper the sweeter)
- 1 cup old-fashioned rolled oats
- 2 large eggs
- 1/2 teaspoon cinnamon
- 1/2 teaspoon vanilla extract
- Pinch of salt
- Butter or coconut oil for the pan
Instructions
- Add bananas, oats, eggs, cinnamon, vanilla, and salt to a blender. Blend until smooth, about 30 seconds.
- Let the batter rest for 2 minutes while you heat a non-stick skillet over medium heat with a small pat of butter.
- Pour about 3 tablespoons of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip carefully and cook for another 1-2 minutes until golden brown.
- Repeat with remaining batter. Serve stacked with fresh berries, a drizzle of maple syrup, or a dollop of yogurt.
Recipe Tips
- The riper the bananas, the sweeter the pancakes. Use bananas with brown spots.
- Don’t make these too large — smaller pancakes (3-inch) flip much easier.
- Add a handful of blueberries or chocolate chips directly to the batter for variety.
- Freeze leftovers in a single layer, then reheat in the toaster for a quick weekday breakfast.
