Banana Oat Pancakes (No Flour)

Prep: 3 mins Cook: 8 mins Total: 11 mins Servings: 2 (6 pancakes)

Ingredients

  • 2 ripe bananas (the riper the sweeter)
  • 1 cup old-fashioned rolled oats
  • 2 large eggs
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Butter or coconut oil for the pan

Instructions

  1. Add bananas, oats, eggs, cinnamon, vanilla, and salt to a blender. Blend until smooth, about 30 seconds.
  2. Let the batter rest for 2 minutes while you heat a non-stick skillet over medium heat with a small pat of butter.
  3. Pour about 3 tablespoons of batter per pancake onto the skillet. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
  4. Flip carefully and cook for another 1-2 minutes until golden brown.
  5. Repeat with remaining batter. Serve stacked with fresh berries, a drizzle of maple syrup, or a dollop of yogurt.

Recipe Tips

  • The riper the bananas, the sweeter the pancakes. Use bananas with brown spots.
  • Don’t make these too large — smaller pancakes (3-inch) flip much easier.
  • Add a handful of blueberries or chocolate chips directly to the batter for variety.
  • Freeze leftovers in a single layer, then reheat in the toaster for a quick weekday breakfast.
