Ingredients

  • 1 cup old-fashioned rolled oats
  • 1/2 cup peanut butter (or any nut butter)
  • 1/3 cup honey
  • 1/4 cup mini chocolate chips
  • 2 tablespoons ground flaxseed
  • 1/4 cup dried cranberries or raisins
  • 1/4 cup chopped almonds or peanuts
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine all ingredients in a large bowl and stir until everything is evenly mixed.
  2. If the mixture feels too sticky, refrigerate for 10 minutes. If too dry, add a teaspoon of honey.
  3. Using your hands, roll into 1-inch balls (about 1 tablespoon each). You should get about 12 balls.
  4. Place on a parchment-lined plate or tray.
  5. Refrigerate for at least 15 minutes to firm up. Store in an airtight container in the fridge for up to 1 week.
